Lemongrass Margaritas
A margarita… but make it herbaceous. This lemongrass margarita is fresh, funky, and full of layered flavour from ginger, cilantro, and an easy homemade lemongrass syrup. It’s the perfect cocktail to sip when you want something bright, bold, and a little unexpected.

Ingredients
For the lemongrass simple syrup (makes extra):
- 1 cup sugar
- 1 cup water
- 1 stalk lemongrass
- 4 slices fresh ginger
For the cocktail:
- 2–3 slices fresh ginger
- 1 handful fresh cilantro
- 1 oz fresh lime juice (about 1 lime)
- ¾ oz lemongrass simple syrup
- 2 oz tequila
- Sea salt, for rim
- Lime wedge and cilantro, for garnish
- Ice
Instructions
- Make the syrup: Remove the tough outer layers of the lemongrass and smash the stalk with the back of a knife. Cut into 2–3 pieces. In a small pot, combine sugar, water, lemongrass, and ginger. Bring to a simmer over medium-high heat and cook for about 15 minutes, until slightly thickened. Let cool and strain.
- Make the cocktail: In a shaker, muddle ginger and cilantro to release their flavour. Add lime juice, simple syrup, tequila, and a big handful of ice. Shake for 30 seconds until cold.
- Run a lime wedge around the rim of your glass and dip in sea salt. Add fresh ice, strain the cocktail into the glass, and garnish with a lime wedge and sprig of cilantro. Cheers!
